Five spring cupcakes

Everyone loves a good cupcake and what’s not to love — they’re sweet, easy to eat and handy to transport for any occasion.

Choosing the perfect cupcake can be tricky, so why limit yourself to just one? To celebrate the arrival of spring, here are five fruity flavours that you can bake from one batch.

For the batter (10 cupcakes)

(Adapted from the “Australian Women’s Weekly” vanilla cake recipe.)


  • 200 grams of butter, softened
  • 370 grams of caster sugar
  • 4 eggs
  • 400 grams of self-raising flour
  • 1 cup of milk


  1. Preheat the oven to 180 degrees Celsius and line a 12-hole muffin tin with 10 cupcake liners.
  2. Cream the butter and sugar until pale and fluffy. Add eggs, one at a time, and beat until combined. Mix in the flour and milk in alternate batches until you have a smooth batter. Divide into five seperate bowls, flavour using the guidelines below, and divide each bowl into two cupcake cases.
  3. Bake for 20-25 minutes or until a skewer comes out clean. Cool on a wire rack.

For the icing


  • 250 grams of butter
  • 3-1/2 cups of icing mixture
  • 2-3 tablespoons of milk (optional)


  1. Beat the butter until it is pale and doubled in size. Mix in the icing sugar mixture and beat until smooth.
  2. Add in milk, a tablespoon at a time, if the mixture gets too thick.
  3. Divide into five seperate bowls, flavour using the guidlines below, then ice each cupcake with its corresponding flavour.

Mojito madness

What could be more spring that sipping a mojito in the sun? Indulging in a little mojito cupcake, of course!

Add to batter:

  • 4 tablespoons of crushed and finely chopped mint
  • Juice and zest of half a lime

Add to icing:

  • Juice and zest of half a lime
  • Mint sprigs to garnish


Strawberry sweet and just a little bit naughty.

Add to batter:

  • 4 fresh strawberries, diced
  • 1 tablespoon of rum (or 1 teaspoon of strawberry essence)

Add to icing:

  • 4 strawberries, mashed
  • 2 fresh strawberries to garnish

Pina colada

Pack your tastebuds and enjoy the holiday with this tasty, tropical cupcake.

Add to batter:

  • 1 tablespoon of Malibu (or coconut cream)
  • 2 tablespoons of fresh (or canned) pineapple, diced

Add to icing:

  • 1 tablespoon of coconut cream (or Malibu)
  • Sprinkle of dessicated coconut to garnish


Let loose your inner child on this tangy, vanilla flavour pop!

Add to batter:

  • 2 teaspoons of vanilla bean paste

Add to icing:

  • Zest and juice of half an orange

Pink lemonade

Get your hipster on with this tasty vintage morsel.

Add to batter:

  • Zest and juice of one lemon

Add to icing:

  • 1/4 cup of frozen raspberries
  • Zest of one lemon to garnish
