Australian Labour Day dessert
Labour Day celebrates the contributions of hard working men and women throughout the world, often honored with festive gatherings centered around good food. If you are partaking in a Labour Day feast, you certainly don't want to spend your holiday from work toiling in the kitchen. This sweet nutty pudding is a quick-to-fix dessert that will give you the chance to actually enjoy your day off.
Ginger Macadamia Nut Pudding
50 grams macadamia nuts, lightly toasted, coarsely chopped
125 grams butter
75 grams brown sugar
30 grams grated ginger
Zest of 2 lemons
125 grams self-rising flour
3 grams salt
125 grams superfine sugar
1. Preheat oven to 180 degrees C. and grease a medium-sized baking dish.
2. In a medium-sized saucepan, melt 30 grams butter. Stir in brown sugar and ginger until sugar dissolves. Stir in lemon zest. Pour into prepared baking dish and sprinkle with nuts. Set aside.
3. In a medium-sized bowl, whisk together flour and salt. In another bowl, beat remaining butter, sugar and eggs. Blend in flour mixture.
4. Pour flour mixture into baking dish. Bake for 30 to 35 minutes.
