Australian Day recipes

Australia Day, an official public holiday celebrated on the 26th of January, commemorates the arrival of the First Fleet at Sydney Cove in the late 1780s and the proclamation of British sovereignty over the eastern seaboard of Australia. A festive occasion, also known as Anniversary Day and Foundation Day, Australia Day is celebrated throughout the country with civic events and festive gatherings that include mouthwatering feasts. Grilled Courgettes

Grilled Poussins

Serves 6

6 cloves garlic, minced
1 bunch fresh cilantro (coriander), finely chopped
Salt and freshly ground black pepper to taste
Zest and juice of 1 lemon
6 evenly-sized poussins, trimmed, split, and flattened
100 grams butter, melted

1. In a large bowl, mix together garlic, cilantro, salt and pepper, and lemon zest and juice. Add poussins and toss to coat. Cover bowl and refrigerate for 6 hours or up to overnight.

2. Take poussins from refrigerator and toss to coat again. Let poussins sit at room temperature for 1 hour.

3. Preheat grill to medium heat. Brush poussins with butter and set on grill, skin-side down. Cook, covered, for 30 minutes, moving to indirect heat if skin starts to burn. Flip poussins and grill, covered, for 15 minutes. Uncover and continue to cook until poussins are cooked through.

4. Allow poussins to sit for 5 minutes before serving hot garnished with fresh herbs and your favorite side dishes.

Grilled Courgettes with Sun-Dried Tomato Pesto

Serves 6

6 same-sized courgettes (zucchini), split in half lengthwise
100 milliliters olive oil
Salt and freshly ground black pepper to taste
Store-bought or prepared sun-dried tomato pesto
A few sprigs fresh parsley, chopped

1. Preheat grill to medium heat. Rub courgettes with olive oil and season with salt and pepper.

2. Grill courgettes until they are tender and slightly charred. Transfer to a serving platter and drizzle with pesto. Garnish with parsley. Serve warm.
