Super-easy slow cooker gumbo for Mardi Gras (VIDEO)

Mardi Gras... the perfect excuse to overindulge on a Tuesday. In fact, on a day called Fat Tuesday, I'm pretty sure it's actually required that you overindulge. That's what I'm going with, anyway...

Though I have no desire to join in the insanity of a New Orleans Mardi Gras celebration, I do have the desire to drink giant hurricanes and eat giant bowls of gumbo. Throw in a po'boy, all the deep-fried things and a piece of king cake for good measure. Overindulgence achieved.

But nobody, myself included, wants to be stuck in the kitchen all night while there's a party going on that would make Bourbon Street jealous. So dust off the slow cooker, and do a little prep work to get this super-flavorful chicken and sausage gumbo cooking. Then throw on some beads, join the fun, and sip on that well-deserved cocktail. Just remember, you will regret that flashing incident in the morning.
