Part 2: Banana mousse
- 3 large bananas
- 1/2 cup caster sugar
- 1/2 teaspoon salt
- 2 tablespoons honey
- 1 tablespoon vanilla essence
- 1 tablespoon natural yogourt
- 3 tablespoons water
- 2 teaspoons gelatin powder
- 1 cup heavy cream
Blend the bananas, sugar, salt and honey
Chop the bananas, place them into a blender with the sugar,
salt, honey, vanilla essence and 1/4 cup of heavy cream, and mix.
Make the gelatin
Pour the water into a small bowl, sprinkle the gelatin powder over the top, and allow it to soften for 5 minutes. Next, heat it in a microwave for 20 seconds, and mix until the gelatin dissolves.
Blend the gelatin and banana mix
Add the gelatin to the banana mix, and blend.
Whip the heavy cream
In a separate bowl, whip the remaining heavy cream until it forms soft peaks.
Fold the cream and banana mix
Carefully fold the banana mixture and yogourt into the cream.
Layer the mousse
Spoon the banana mousse into the glasses or jars from part 1, and refrigerate for 6 hours.
