Grown-up grilled cheese

OK, honestly, who among us can resist one — a perfectly grilled sandwich with gooey cheese oozing out between layers of golden toasted bread? Well, perhaps there’s one or two in the crowd, but then again, maybe they haven’t tried one of these delicious gourmet grilled cheese recipes.

Your grilled cheese has grown up, so are you ready to make the move from processed cheese on white bread to something a bit more gourmet? Get ready to dive right in, as these grilled cheese sandwiches are hard to resist.

Smoked Gouda and dried tomato grilled cheese

Serving size 1

Ingredients:

  • Grape or cherry tomatoes, sliced in half lengthwise
  • Extra-virgin olive oil
  • Ground sea salt or kosher salt
  • Smoked Gouda
  • Basil pesto
  • Ciabatta bread
  • Butter

Directions:

  1. Heat the oven to 250 degrees F.
  2. Add the tomatoes halved side up to a silicone or parchment-lined baking sheet, and drizzle with olive oil. Sprinkle them lightly with salt.
  3. Place the tomatoes into the oven, cook for 30 minutes, then turn off the heat, and let them dry undisturbed for a few hours. When they’ve shrunk but are still flexible, remove them from the heat, and let them cool.
  4. Spread a layer of pesto on one slice of bread, then add the dried tomatoes and smoked Gouda.
  5. Top with another slice of bread, and spread butter on the outside of each piece.
  6. Cook until both sides are golden brown and the Gouda has melted.

Brie and lobster grilled cheese

Serving size 1

Ingredients:

  • Butter
  • Truffle oil
  • Brie
  • Medium cheddar, grated
  • Fully cooked lobster meat
  • Crusty sourdough bread

Directions:

  1. Melt approximately 1 tablespoon of butter in the microwave, then add 1 teaspoon of truffle oil. Set aside.
  2. Layer thick slices of Brie, chunks of lobster meat, about a 1/4 cup of grated cheddar, and a drizzle of truffle oil between two slices of bread.
  3. Brush both outer sides of the sandwich with the butter-oil mixture, and place it in a skillet over medium heat.
  4. Cook both sides until browned and the cheese has melted.

Grilled cheddar and apple sandwich

Serving size 1

Ingredients:

  • Chopped walnuts
  • Aged white cheddar, grated
  • Thin Granny Smith apple slices
  • Baby arugula
  • Honey
  • Multi-grain or whole-grain bread
  • Unsalted butter, melted

Directions:

  1. Add the chopped walnuts to a small skillet over medium heat. Stir constantly until they are lightly browned and fragrant, approximately 5 minutes. Set aside.
  2. Layer the grated cheddar, apple slices, toasted walnuts, a drizzle of honey and arugula on one slice of bread. Cover with the other slice of bread, and brush with melted butter.
  3. Cook in a skillet over medium heat until the whole sandwich is nicely browned and the cheddar is completely melted.
