Like most fruits, persimmons are rich in vitamins and minerals. They are high in beta-carotene, potassium and vitamins A and C, and a glass of this fruit plus other natural and healthy ingredients can benefit our bodies. They are autumn fruits and perfect in an end-of-season iced drink before the real cold settles in. Grab some ripe persimmons, and puree them in the blender with some sparkling water, fresh lemon, sugar and ice. You will be hooked, just like me and my family.
Blended persimmon mocktail recipe
Persimmons are delicious fruits that should be enjoyed in different ways. This time, I blended them with lemon, sugar, sparkling water and ice for a delicious, seasonal mocktail you’ll want to make again and again.
Total time: 5 minutes
- 1 persimmon, peeled (or 1 cup pulp)
- 1/2 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 tablespoon sugar
- 1 cup sparkling water
- Ice cubes
- To a blender, add the persimmon, lemon juice, zest, sugar, water and ice. Blend until smooth.
- Pour into a glass, and serve immediately.
