We rarely go out to eat at restaurants anymore. The long lines, a screaming toddler and gobbling up your food in 20 minutes doesn’t sound like fun. This week we celebrated my husband’s birthday, and I wanted to fix a nice, fancy meal.
But a nice, fancy meal that wouldn’t take hours to prepare. Lamb chops are always well received in our house, and I decided to make a batch for his birthday. These rosemary-garlic-crusted lamb chops served on a grilled corn salad were perfect. I grabbed the salad at my local store, but you could also place the chops on couscous or mashed potatoes.
I was able to make this nice, fancy birthday dinner in 10 minutes. It’s hard to beat that, and it was a meal the whole family could enjoy.
