Smoked salmon and arugula with creamy french onion cheese
?I love putting subtle spins on classics. Today I'm taking on bagels with lox, one of my favorites.
The flavors are so good: tangy cheese, smokey and silky salmon and the golden brown awesomeness of a toasted bagel. But here's the thing: A bagel with lox can be a little overwhelming and heavy, especially if you want a quick bite between meals. That's why I thought The Laughing Cow's Creamy Swiss French Onion would be perfect. It has a lovely, rich flavor from the french onion, and is the perfect contrast against a toasted English muffin.
- 1 wedge, The Laughing Cow Creamy Swiss French Onion Cheese
- 1 English muffin, split and toasted
- 1 slice of smoked salmon
- A small handful of arugula
- 1/2 teaspoon chopped dill
Spread the English muffin with a wedge of cheese. Top with a sprinkling of dill, followed by the smoked salmon, arugula and other half of the muffin.
