Just when you thought pulled pork couldn't taste any better, it does when topped with a spicy cheese sauce and nestled in a soft corn tortilla.

Pulled pork never tasted as good as it does when slow cooked in chipotle chili powder with just a bit of smoked paprika. And the aroma in the house while it's cooking is heavenly. The hardest part about making these tacos is transferring the pulled pork to the tortillas, as it's possible that some of the pulled pork might disappear. I'm speaking from experience here, because when the chef is hungry, it can be very risky business.

Slow cooker chipotle pork tacos with jalapeño cheese sauce recipe

Serves 4-5


For the pork tacos

  • 1 pork shoulder blade roast (about 4 pounds)
  • 3/4 cup water
  • 2 tablespoons chipotle chili powder
  • 3 dashes smoked paprika
  • 1 teaspoon salt
  • 1-1/2 teaspoons ground black pepper
  • 1-1/2 teaspoons onion powder
  • 4 drizzles olive oil
  • 5 dashes salt, or salt to taste (for the cooked pork)
  • 10 corn tortillas
  • 1-1/2 cups chopped onion
  • 1-1/2 cups coarsely chopped cilantro
  • 3 jalapeño peppers, coarsely chopped
  • Jalapeño cheese sauce

For the jalapeño cheese sauce

  • 3 cups shredded jalapeño cheese
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon ground black pepper
  • 4 dashes salt (or salt to taste)
  • 3 teaspoons Sriracha sauce


For the pork tacos

  1. In a slow cooker, add the pork (fat side up) and water.
  2. Using a large cooking fork, lift the roast slightly, and sprinkle the chipotle chili powder, smoked paprika, salt, pepper and onion powder under the roast and then on top.
  3. Drizzle olive oil on top of the pork.
  4. Slow cook on the 6-hour setting.
  5. Remove the roast from the slow cooker and onto a large plate.
  6. With a fork in each hand, pull the pork off the bone, and then pull apart the meat.
  7. Add salt to taste.
  8. Lay 3 tortillas at a time on a large glass plate so that they're not overlapping.
  9. Turn another plate upside down, and use it as a cover or "lid" over the tortillas.
  10. Warm the tortillas in the microwave for about 30 seconds or until soft. The tortillas will need to be warmed in batches, depending on the number of servings.
  11. Add the pulled pork to the warm tortillas, and top with the onion and cilantro.
  12. Top with jalapeño cheese sauce, and serve while hot.

For the jalapeño cheese sauce

  1. Heat a small pot on low heat, and add all the ingredients. Stir as the cheese melts.
  2. Continue stirring until the sauce is the desired consistency.
  3. Serve on top of the pulled pork soft tacos.
