Mango margarita ice pop recipe

Mango margarita popsicles

Everyone loves ice pops, but grown-ups really love them when they’re made with fresh mango, lime juice and tequila.

Serves 3

  • 1 mango, peeled and cubed (about 1-1/2 cups)
  • 3 tablespoons lime juice
  • 1/4 teaspoon kosher salt
  • 2 tablespoons sugar
  • 2 tablespoons tequila

  1. Place the mango, lime juice, kosher salt, sugar and tequila in a food processor. Blend until the mango is completely pureed.
  2. Pour the puree into 3 ice pop molds, or use paper cups with foil over the top, and poke ice pop sticks through the foil.
  3. Freeze for at least 2 hours, until solid.

  1. Pour the tequila into a glass or cocktail shaker.

  4. Use a funnel to pour the margarita shots back into the bottles (you will have 1 extra shot), and refrigerate until ready to serve.
