Guinness-spiked St. Patrick’s Day menu

Even though I loved St. Patrick’s Day as a kid, being an adult when March 17 rolls around is an entirely different ballgame. Instead of parades and gold-shaped candy, we’re enjoying boozy pancakes and big pints of Guinness.

This boozy menu is the perfect way to celebrate St. Patrick’s Day at home. From a big stack of fluffy Guinness chocolate pancakes to boozy stew and milkshakes, your whole day will be a fantastic blur of delicious food and excitement.


Guinness chocolate pancakes recipe

Guiness chocolate pancakes

Serves about 4


  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 2-1/4 cups Guinness stout
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 cup unsalted butter
  • 1 cup chocolate chips


  1. In a large bowl, whisk the flour, cocoa powder and baking powder together.
  2. In a large bowl, beat the butter and sugar together until soft and fluffy. Add the Guinness and eggs, stir to combine.
  3. Make a well into the center of the dry ingredients and add the wet ones. Stir to combine. Carefully fold in the chocolate chips.
  4. Heat a griddle over medium-high heat. Add about 1/4 cup of batter onto the griddle and cook until bubbles appear on the top. Repeat until all of the pancakes have been made.

Guiness and mashed potato stew

Serves about 4


  • 1-1/2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 pound beef stew meat
  • 2-1/2 cups sliced onions
  • 1/2 tablespoon tomato paste
  • 2 cups lower-sodium beef broth
  • 1/2 bottle (about 6-1/2 ounces) Guinness stout
  • 3/4 cup sliced parsnip
  • 3/4 cup sliced carrot
  • 1 cup mashed potatoes
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • Fresh herbs such as parsley


  1. Heat the oil in a large Dutch oven over medium-high heat. Add the onions and cook until slightly translucent, about 4 minutes. Add in the carrot and parsnip, cook until slightly soft, about 2 minutes. Mix in the flour until you get a thick paste. Salt and pepper the beef stew meat and add to the vegetable mixture.
  2. Brown the beef on all sides and then reduce the heat to medium low. Stir in tomato paste, Guinness, beef broth, salt, pepper and garlic powder.
  3. Cover and reduce heat to low, cooking about 35-45 minutes. Remove the cover and cook another 10 minutes. Add more salt and pepper as needed.
  4. To serve, ladle stew into bowls and top with mashed potatoes and fresh parsley.

  • 2 cups vanilla ice cream
  • 2 cups Breyer’s Gelato Indulgences Tiramisu
  • 1/4 cup chocolate chips
  • About 7 ounces (1/2 bottle) Guinness
  • 7 ounces low-fat milk
  • Hershey’s Kisses, for garnish


  1. Place the ice cream, gelato, chocolate chips, milk and Guinness into a powerful blender. Pulse on low until mixture is thick and creamy. Garnish the top with Kisses and chocolate syrup.
