Pumpkin-raisin bread with cream cheese frosting recipe

Yields 1 loaf

For the bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup packed brown sugar
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 tablespoons orange juice
  • 2 tablespoons orange zest
  • 1/2 cup raisins
  • Nonstick cooking spray

For the cream cheese frosting

  • 6 ounces cream cheese, softened to room temperature
  • 2 tablespoons butter, softened
  • 1-1/2 cup confectioners' sugar (plus extra, as needed)
  • 2 tablespoons orange juice
  • 1 tablespoon finely chopped pecans (optional)

For the bread

  1. Preheat your oven to 350 degrees F. Spray a 9 x 5-inch loaf pan with the cooking spray, then add a bit of flour to the pan. Tilt the pan and turn it so the flour lightly coats the bottom and sides of the pan. Dump out any excess flour.
  2. Add the flour, baking soda, salt, cinnamon, nutmeg, and ginger to a bowl. Whisk to combine.
  3. In a separate bowl, add the brown sugar, pumpkin, butter, eggs, orange juice, and zest. Mix with a blender until smooth.
  4. A little at a time, add the flour mixture to the pumpkin mixture and stir to combine.
  5. Stir in the raisins, then spoon the batter into the loaf pan. Bake for 55-60 minutes, or until a knife inserted into the middle of the bread comes out clean.
  6. Remove from the oven and set the pan with the bread in it on a cooling rack for about 5 minutes.
  7. Carefully tilt the bread out of the pan and allow it to cool completely on the rack.

For the cream cheese frosting

  1. While the bread is baking, mix together the softened cream cheese, butter, confectioners' sugar, and orange juice. Stir until smooth.
  2. Add more confectioners' sugar, as needed, to thicken the frosting.
  3. When the bread is completely cool, evenly spread the cream cheese frosting over the top, then sprinkle on the chopped pecans, if using.
  4. Slice and serve.

Enjoy the flavors of fall!
