Irish Vegetable Soup

Serves 8

Ingredients:

  • 2 tablespoons olive oil
  • t

  • 1 large onion, chopped
  • t

  • 2 stalks of celery, chopped
  • t

  • 2 carrots, chopped
  • t

  • 1-1/2 pounds potatoes, diced
  • t

  • 8 cups vegetable broth
  • t

  • 1/2 head of cabbage, sliced
  • t

  • 1 tablespoon fresh thyme
  • t

  • 1 tablespoon minced fresh sage
  • t

  • 1 tablespoon minced fresh parsley
  • t

  • Salt and freshly ground black pepper to taste

Directions:

    t

  1. Heat olive oil in a large pot over medium heat.
  2. t

  3. Add onion, celery, and carrots. Cook, stirring often, until the onion softens.
  4. t

  5. Add remaining ingredients, stirring to combine.
  6. t

  7. Bring to a boil. Reduce heat and simmer, loosely covered, for 30 minutes or until all of the vegetables are tender.
  8. t

  9. Use an immersion blender to puree part of the soup to make it creamy. You still want chunks of vegetables visible.
  10. t

  11. Season to taste and serve hot.
