Stacked Portabello Sandwich

Serves 1 to 2

Ingredients:

  • 2 tablespoons olive oil
  • t

  • 3 portabello mushroom caps, ribs removed
  • t

  • Salt and freshly ground black pepper
  • t

  • 4 ounces vegan cream cheese
  • t

  • 1/2 cup roasted red peppers, torn into long pieces
  • t

  • Fresh basil leaves

Directions:

    t

  1. Rub or brush oil on mushrooms. Sprinkle with salt and pepper.
  2. t

  3. Broil or grill mushroom caps until they are softened and browned.
  4. t

  5. Allow to cool slightly.
  6. t

  7. Whip cream cheese with a little salt and pepper.
  8. t

  9. Layer mushrooms, cream cheese, peppers, and basil leaves to create a stacked sandwich.
  10. t

  11. Cut in half or into fourths and serve.
