Cinnamon Quinoa with Fruit

Serves 4

Ingredients:

  • 1-1/4 cups quinoa
  • t

  • 1-1/4 cups water
  • t

  • 1-1/4 cups coconut milk (shake can well before opening) plus more for drizzling
  • t

  • 1 teaspoon ground cinnamon
  • t

  • 1/4 teaspoon ground cloves
  • t

  • A few grates of nutmeg
  • t

  • Generous pinch of salt
  • t

  • Fresh raspberries
  • t

  • Banana slices

Directions:

    t

  1. Combine quinoa, water, coconut milk, spices, and salt in a large pot over high heat.
  2. t

  3. Bring to a boil, stirring occasionally. Reduce heat to low, cover, and simmer for 12 minutes or until most of the liquid is absorbed.
  4. t

  5. Divide among 4 bowls and drizzle with additional coconut milk.
  6. t

  7. Serve hot topped with raspberries and bananas.
