Cutie Walnut Salad
Serves 4
Ingredients:

- 6 cups mixed salad greens
- 4 Cuties, peeled, segmented
- 1 cup walnut halves, toasted
- 2 tablespoons apple cider vinegar
- 6 tablespoons extra virgin olive oil
- 2 tablespoons finely chopped fresh chives (or the green part of a green onion)
- Salt and freshly ground black pepper

Directions:

- In a large bowl, toss together greens, citrus, and walnuts.
- In a small bowl, whisk together vinegar, oil, and chives. Season with salt and pepper.
- Pour half of the vinaigrette over the salad and toss.
- Divide salad among 4 plates and drizzle with a little more vinaigrette. Serve immediately.
