Pecan Orange Slaw
Makes 8 servings
- 1 cabbage head, small, shredded
- 4 oranges, small, peeled, diced
- 1/2 cup pecans, chopped
- 3/4 cup vegan mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- 1/2 teaspoon salt
- In a large bowl, combine cabbage, oranges and pecans.
- In a small bowl, whisk together mayo, lemon juice, sugar, and salt.
- Pour mayo mixture over cabbage mixture and toss to coat.
- Cover bowl and refrigerate for 20 to 30 minutes before serving.
