Rice with Currants and Peanuts

Serves 8

Ingredients:

    t

  • 1/4 cup unsalted raw peanuts
  • t

  • 2 tablespoons olive oil
  • t

  • 4 green onions, white parts only, sliced
  • t

  • 1-1/2 cups medium grain rice
  • t

  • 1/4 cup currants
  • t

  • 3 cups hot water
  • t

  • Salt and freshly ground black pepper
  • t

  • Sprigs or sprinkling of fresh herbs

Directions:

    t

  1. Heat a small skillet over medium-low heat. Add the peanuts and toss gently for 2 to 3 minutes, or until they begin to brown lightly. Remove to a small bowl.

  3. In a medium saucepan, heat the oil over medium heat. Saute the green onions for 2 minutes, or until softened.
  4. t

  5. Raise the heat to high. Saute the rice for about 3 minutes, or until well coated.
  6. t

  7. Add the currants and stir to combine. Reduce the heat to medium, add the hot water, stir, and bring to a boil. Cover and reduce the heat to low.
  8. t

  9. Simmer the rice for about 20 minutes, or until all the liquid has been absorbed and the rice is tender. Season with salt and pepper and add the peanuts.
  10. t

  11. Taste and adjust the seasonings. Serve immediately.
