Sweet Potato Apricot Salad

Serves 4

Ingredients:

  1. 1 cup quinoa

  3. 2 cups vegetable broth
  4. t

  5. 1 large sweet potato, peeled, cut into chunks
  6. t

  7. 3/4 cup dried apricots, sliced
  8. t

  9. 2 cups baby spinach leaves
  10. t

  11. 2 cups mixed salad greens
  12. t

  13. 2 tablespoons white balsmic vinegar
  14. t

  15. 5 tablespoons extra virgin olive oil
  16. t

  17. Salt and freshly ground black pepper to taste
  18. t

  19. Crumbled cheese of your choice (optional)

Directions:

  1. In a medium saucepan over high heat, bring quinoa and broth to a boil. Reduce heat to low, cover pan, and simmer for 12 minutes or until broth is absorbed.

  3. Meanwhile, steam sweet potatoes until tender. Set aside.

  5. In a large bowl, toss together apricots, spinach, and salad greens.

  7. In a small bowl, whisk together vinegar, oil, and salt and pepper.

  9. Season quinoa with salt and pepper. Spoon into 4 bowls.

  11. Drizzle with a little of the vinaigrette.

  13. Drizzle salad greens with a little of the vinaigrette, tossing to coat.

  15. Place salad greens over quinoa.
  16. t

  17. Top with sweet potatoes and cheese. Drizzle with vinaigrette to taste.
