Warm Succotash

Ingredients:

  • 3 tablespoons olive oil
  • t

  • 1 onion, halved, thinly sliced
  • t

  • 8 ounces sliced mushrooms
  • t

  • 2 carrots, sliced
  • t

  • 2 garlic cloves, minced
  • t

  • 2 cups shelled fresh soybeans (edamame)
  • t

  • 2 cups fresh or frozen (thawed) corn kernels
  • t

  • 2 tablespoons minced fresh parsley
  • t

  • 1 teaspoon fresh thyme
  • t

  • 1 tablespoon grated lemon zest
  • t

  • Salt and freshly ground black pepper

Directions:

  1. Heat oil in a large skillet over medium heat.

  3. Add onions, mushrooms, and carrots. Cook, stirring often, until onions are lightly browned.

  5. Add garlic, edamame, corn, parsley, thyme, and lemon zest. Cook, stirring often, until edamame is heated through.
