Rocket Apple Quinoa Salad

Tender sauteed apples, spicy arugula and protein-rich quinoa tossed with a sweet chili dressings is a yummy meal all by itself.

Ingredients:

  • 1 cup quinoa
  • t

  • 2 cups water
  • t

  • 2 tablespoons vegan butter
  • t

  • 4 small apples, cored, sliced
  • t

  • 2 tablespoons granulated sugar
  • t

  • Pinch of salt
  • t

  • 2 tablespoons sweet chili sauce
  • t

  • 2 tablespoons apple or orange juice
  • t

  • 3 tablespoons olive oil
  • t

  • 1 tablespoon minced fresh chives or green onion (green part)
  • t

  • 4 cups arugula

Directions:

    t

  1. Bring quinoa and water to a boil in a medium saucepan over high heat. Reduce heat to low, cover pan, and simmer for 12 minutes or until water is absorbed.

  3. Meanwhile, heat butter in a large skillet over medium heat. When butter is melted, add apples, sugar, and salt. Cook, stirring often, until apples become fork tender. Remove from heat.
  4. t

  5. In a large bowl, whisk together chili sauce, juice, olive oil, and chives or green onion. Season with a pinch of salt.
  6. t

  7. Add quinoa, arugula, and apples to bowl and toss well to combine.
  8. t

  9. Serve immediately.
