Bagel Salad

Serves 1

Ingredients:

  • 1 vegan bagel, split, toasted if desired
  • t

  • 2 tablespoons apple butter
  • t

  • 1/4 cup cucumber slices
  • t

  • 1/4 cup radish slices
  • t

  • 4 lettuce leaves
  • t

  • Salt and freshly ground black pepper

 

Directions:

    t

  1. Spread the cut-side of the bagel halves with apple butter.
  2. t

  3. Stuff with remaining ingredients. Enjoy!
