Vegan Split Pea Soup

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, minced
- 1 large carrot, diced
- 2 bay leaves
- 5 cups vegetable broth
- 1-1/2 cups green split peas, rinsed, picked over to remove debris
- 1 tablespoon fresh thyme
- Salt and freshly ground black pepper

- Heat oil in a large pot over medium heat. Add garlic, onion, and carrot and cook, stirring often, until carrot is soft.
- Add bay leaves, broth, and peas and bring to a boil.
- Reduce heat to medium-low, cover, and simmer, stirring occasionally, for 1 hour or until peas are tender.
- Discard bay leaves. Stir in thyme and cook for 5 more minutes.
- Using a blender or food processor, process soup until it is chunky or smooth, depending on your desired consistency.
- Season with salt and pepper. Reheat in the pot, if necessary.
- Serve hot.
