Vegan Split Pea Soup

Serves 6

Ingredients:

  • 2 tablespoons olive oil
  • t

  • 2 cloves garlic, minced
  • t

  • 1 small onion, minced
  • t

  • 1 large carrot, diced
  • t

  • 2 bay leaves
  • t

  • 5 cups vegetable broth
  • t

  • 1-1/2 cups green split peas, rinsed, picked over to remove debris
  • t

  • 1 tablespoon fresh thyme
  • t

  • Salt and freshly ground black pepper

Directions:

  1. Heat oil in a large pot over medium heat. Add garlic, onion, and carrot and cook, stirring often, until carrot is soft.
  2. t

  3. Add bay leaves, broth, and peas and bring to a boil.
  4. t

  5. Reduce heat to medium-low, cover, and simmer, stirring occasionally, for 1 hour or until peas are tender.

  7. Discard bay leaves. Stir in thyme and cook for 5 more minutes.
  8. t

  9. Using a blender or food processor, process soup until it is chunky or smooth, depending on your desired consistency.
  10. t

  11. Season with salt and pepper. Reheat in the pot, if necessary.

  13. Serve hot.
