Sauteed Beet and Apple Salad

Serves 6

Ingredients:

  • 2 tablespoons olive oil
  • t

  • 2 medium beets, trimmed, cut into wedges
  • t

  • Salt and freshly ground black pepper
  • t

  • 3 tablespoons water
  • t

  • 2 apples, cored, sliced
  • t

  • 6 cups mixed greens
  • t

  • 1/4 cup thinly sliced red onion
  • t

  • 3 tablespoons walnut oil
  • t

  • 1 tablespoon white balsamic vinegar
  • t

  • Crumbled feta-style vegan cheese

Directions:

    t

  1. Heat oil in a large skillet over medium heat.
  2. t

  3. Add beets and cook, stirring, to coat with oil. Season with salt and pepper.
  4. t

  5. Continue to cook, stirring often, for about 5 minutes.
  6. t

  7. Add water and cover skillet. Cook for 10 minutes or until beets are just tender.
  8. t

  9. Add apples and continue to cook, stirring often, until apples are just tender.
  10. t

  11. In a large bowl, combine beet mixture, greens, and onion.
  12. t

  13. In a small bowl, whisk together oil and vinegar. Pour over salad and toss to coat.
  14. t

  15. Serve garnished with cheese.
