Roasted Beets with Mint

Ingredients:

  • 1-1/2 pounds trimmed beets, scrubbed, sliced
  • t

  • 3 tablespoons olive oil
  • t

  • Salt and freshly ground black pepper
  • t

  • Handful of fresh mint leaves
  • t

  • Crumbled vegan-style feta

Directions:

    t

  1. Preheat oven to 400 degrees F.
  2. t

  3. Toss beets in olive oil and season with salt and pepper.
  4. t

  5. Arrange beet slices in a single layer on 2 baking sheets sprayed with cooking spray.
  6. t

  7. Roast for 20 minutes or until beets are tender.
  8. t

  9. Arrange beets on a serving platter.
  10. t

  11. Drizzle with additional olive oil and scatter with mint and feta.
