- 2 tablespoons olive oil
- 6 cups coarsely chopped kale leaves
- Salt and freshly ground black pepper
- 1 cup dried cranberries

- Place pine nuts in a small dry skillet over medium-high heat. Toast, shaking skillet often, until pine nuts are light golden. Immediately remove from heat to avoid scorching them.
