Sauteed Kale with Pine Nuts and Cranberries

  • 2/3 cup pine nuts

  • 2 tablespoons olive oil
  • t

  • 6 cups coarsely chopped kale leaves
  • t

  • Salt and freshly ground black pepper
  • t

  • 1 cup dried cranberries

Directions:

  1. Place pine nuts in a small dry skillet over medium-high heat. Toast, shaking skillet often, until pine nuts are light golden. Immediately remove from heat to avoid scorching them.

  3. Heat oil in a large skillet over medium heat. Add kale and toss to coat with oil. Season with salt and pepper. Cover skillet and cook for 2 minutes.
