Holiday Rum Balls

Ingredients:

  • 2 cups gingersnap cookie crumbs
  • t

  • 1-1/2 cups pecans
  • t

  • 1 cup confectioners’ sugar
  • t

  • Generous pinch of ground ginger
  • t

  • Generous pinch of salt
  • t

  • 2 tablespoons maple syrup
  • t

  • 1/3 cup rum
  • t

  • 1 cup finely shredded coconut

Directions:

  1. Place 2 cups of the cookie crumbs in a large bowl.

  3. Finely grind pecans in a food processor. Add them to the bowl.
  4. t

  5. Add sugar, ginger, and salt, stirring to combine. Stir in syrup and rum.
  6. t

  7. Refrigerate for 30 minutes.

  9. Spread coconut in a shallow bowl.
  10. t

  11. Using a tablespoon, scoop out spoonfuls of the rum mixture and shape into 1-inch balls.

  13. Roll the balls in the coconut. Place balls on a silicone-lined baking sheet.

  15. Refrigerate until firm, about 1 hour.

  17. Store in an airtight container in the refrigerator for up to 2 weeks.
