Kicked Up Rice Crispy Treats

Classic rice crispy treats are inherently void of any significant nutrition -- and most aren't vegan-friendly because they require butter and marshmallows (which often contain gelatin). However, our vegan rendition of this popular treat is not just free of animal products, it is loaded with nutrient-dense almonds and raisins. Enjoy!

Vegan Rice Cripsy Treats

Yields 16

Ingredients:

  • 8 cups crispy brown rice cereal

  • 1 cup raw almonds

  • 1/2 cup raisins (or other dried fruit of your choice)

  • 1/4 cup ground flax seed

  • 1 cup brown rice syrup

  • 2/3 cup your favorite natural nut butter, well stirred

  • 1 teaspoon pure vanilla extract


Directions:

  1. Lightly grease a 9×13-inch baking dish.

  2. Combine brown rice cereal, almonds, raisins and ground flax in a large bowl. Set aside.

  3. In a medium pan, combine rice syrup, nut butter and vanilla extract. Heat over medium heat, stirring often, until ingredients are melted and smooth.

  4. Pour syrup over rice crisp mixture and stir to coat.

  5. Once all crisps have been coated, transfer the mixture to the prepared pan and even it out with a spatula, pressing down firmly.

  6. Refrigerate for at least 1 hour before cutting into squares.
