No Bake Banana Cream Pie

Serves 8

Crust:

    t

  • 1 cup pitted dates
  • t

  • 2 cup raw almonds
  • t

  • 1 teaspoon pure vanilla extract (optional)
  • t

  • 2 tablespoons agave nectar or maple syrup

Filling:

    t

  • 8 to 10 frozen bananas

Optional toppings:

    t

  • Sliced fresh bananas
  • t

  • Vegan chocolate sauce
  • t

  • Vegan caramel syrup
  • t

  • Shredded toasted coconut

Directions:

    t

  1. Process the dates in a food processor. Slowly add almonds until a fine consistency is reached.
  2. t

  3. Add vanilla, agave nectar or maple syrup. Press mixture into a 9-inch pie pan.
  4. t

  5. Process the bananas through Omega Juicer using the blank screen or process in a food processor. You want the consistency to be VERY thick and creamy, like thick frozen yogurt or soft serve ice cream.
  6. t

  7. Spread banana mixture over crust. Top with topping of your choice and freeze until ready to serve.
