Quick Corn Salsa

Makes 3 cups

Ingredients:

  • 1 tablespoon olive oil
  • t

  • 1 cup corn kernels
  • t

  • 1/4 cup thinly sliced red onion
  • t

  • 1 clove garlic, minced
  • t

  • 1-1/2 cups store-bought salsa
  • t

  • 3 tablespoons minced fresh cilantro

Directions:

  1. Heat oil in a small skillet over medium-high heat.
  2. t

  3. Add corn and onion, and cook, stirring often, for 3 minutes or until onion is softened.
  4. t

  5. Add garlic and cook, stirring, for 1 minute.
  6. t

  7. Remove from heat and let cool while you’re preparing other dishes for your meal.
  8. t

  9. In a medium bowl, combine corn mixture, salsa, and cilantro.
  10. t

  11. Store leftover salsa in an airtight container in the refrigerator for up to 4 days.
