Vegan Athenian Salad
Serves 6
Ingredients:

- 3 cups cooked Rice Select Texmati Brown Rice, warm
- 1/3 cup oil packed dried tomatoes, drained and chopped
- 1 cup thinly sliced green onions
- 1/2 cup sliced pitted Kalamata olives
- 1 cup vegan feta-style cheese
- 1/4 cup vegan Caesar salad dressing
- Salt and freshly ground black pepper
- Romaine lettuce leaves
- Chopped walnuts

Directions:

- Combine rice, tomatoes, onions, olives and feta in a bowl.
- Drizzle dressing over rice mixture and season with salt and pepper. Toss again.
- Line bowls or plates with lettuce leaves and mound rice on top of lettuce. Serve immediately garnished with walnuts.
