Vegan Athenian Salad

Vegan Athenian Salad

Serves 6

Ingredients:

    t

  • 3 cups cooked Rice Select Texmati Brown Rice, warm
  • t

  • 1/3 cup oil packed dried tomatoes, drained and chopped
  • t

  • 1 cup thinly sliced green onions
  • t

  • 1/2 cup sliced pitted Kalamata olives
  • t

  • 1 cup vegan  feta-style cheese
  • t

  • 1/4 cup vegan Caesar salad dressing
  • t

  • Salt and freshly ground black pepper
  • t

  • Romaine lettuce leaves
  • t

  • Chopped walnuts

Directions:

    t

  1. Combine rice, tomatoes, onions, olives and feta in a bowl.
  2. t

  3. Drizzle dressing over rice mixture and season with salt and pepper. Toss again.
  4. t

  5. Line bowls or plates with lettuce leaves and mound rice on top of lettuce. Serve immediately garnished with walnuts.
