Cashew Chocolate Chip Cookie Dough Ice Cream

Rolling scoops of ice cream in nuts gives this dessert a boost in nutrition and a lovely contrasting crunch.

Makes 3 cups

Ingredients:

  • 1/2 cup salted cashews
  • t

  • 1/4 cup old-fashioned oats
  • t

  • 2 tablespoons agave
  • t

  • 1/2 teaspoon pure vanilla extract
  • t

  • 1/3 cup chopped dark chocolate
  • t

  • 1 pint dairy-free vanilla ice cream, softened
  • t

  • Coarsely chopped walnuts or cashews

Directions:

  1. Place cashews and oats in a food processor and process until finely chopped. Scrape down bowl.
  2. t

  3. Add agave and vanilla and process until combined.
  4. t

  5. Transfer dough to a small bowl and mix in dark chocolate.
  6. t

  7. Use a teaspoon to make cookie dough chunks or balls.
  8. t

  9. Scoop ice cream into a large bowl. Stir cookie dough chunks into softened ice cream.
  10. t

  11. Cover bowl and freeze until ready to eat.
  12. t

  13. To serve, scoop ice cream onto a cone then roll in nuts.
