Coconut Rice

  • 1 cup basmatic rice, rinsed well and drained
  • t

  • 1 (15-ounce) can coconut milk
  • t

  • 1/2 teaspoon salt
  • t

  • 1/2 cup dried currants (optional)
  • t

  • 1/2 cup shredded coconut (optional)

Directions:

    t

  1. Bring rice and coconut milk to a boil in a medium saucepan over medium-high heat.
  2. t

  3. Reduce heat to low, cover pan, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and keep covered for 10 minutes.
  4. t

  5. Fluff rice and add remaining ingredients. Serve warm.
