- 1 cup basmatic rice, rinsed well and drained
- 1 (15-ounce) can coconut milk
- 1/2 teaspoon salt
- 1/2 cup dried currants (optional)
- 1/2 cup shredded coconut (optional)

Directions:

- Bring rice and coconut milk to a boil in a medium saucepan over medium-high heat.
- Reduce heat to low, cover pan, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and keep covered for 10 minutes.
