All you need is a large bowl of really good pitted olives, your favorite seasonings, and olive oil, and you’ve got the makings for a fast yet impressive holiday finger food.

Marinated Olives

Yields 4 cups

Ingredients:

  • 4 cups pitted green or black olives (not the kind of black olives in a can)
  • t

  • Finely grated zest and juice of 1 orange
  • t

  • 3 cloves garlic, minced
  • t

  • Generous pinch red pepper flakes
  • t

  • 1 heaping tablespoon finely chopped fresh basil
  • t

  • 1 teaspoon fresh rosemary
  • t

  • 1/2 teaspoon dried oregano
  • t

  • Generous pinch salt
  • t

  • A few grinds black pepper
  • t

  • 1/4 cup olive oil

Directions:

  1. Combine all ingredients in a large bowl, tossing to coat.

  3. Refrigerate for 1 hour, stirring occasionally.
  4. t

  5. Serve chilled or at room temperature.
