Spinach Salad with Fresh Figs, Cranberries and Walnuts

Ingredients:

  • 8 cups baby spinach leaves
  • t

  • 4 fresh figs, cut into wedges
  • t

  • 1 cup yellow cherry tomatoes, each halved
  • t

  • 2/3 cup dried cranberries
  • t

  • 1 tablespoon white balsamic vinegar
  • t

  • 1 tablespoon walnut oil
  • t

  • 2 tablespoons extra virgin olive oil
  • t

  • 2 teaspoons grated lemon zest
  • t

  • Salt and freshly ground black pepper
  • t

  • 1 cup toasted walnuts

Directions:

  1. Divide spinach among 4 chilled salad plates.

  3. Top with figs, cherry tomatoes, and cranberries.
