Edamame Salad

Serves 4

Ingredients:

  • 2 cups shelled fresh soy beans (edamame)
  • t

  • 1 cup corn kernels
  • t

  • 1 small red bell pepper, seeded, diced
  • t

  • 1/2 small red onion, thinly sliced
  • t

  • 1 cup dried cranberries
  • t

  • 3 tablespoons extra virgin olive oil
  • t

  • 1 tablespoon white balsamic vinegar
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. Toss all ingredients in a large bowl.
  2. t

  3. Serve immediately or refrigerate salad in an airtight container for up to 3 days.
