Herb Baked Butternut Squash

Serves 4

Ingredients:

  • 2 medium butternut squash, halved lengthwise, seeded
  • t

  • 6 tablespoons olive oil
  • t

  • 1/4 cup finely chopped herbs of your choice
  • t

  • Salt and freshly ground black pepper to taste

Directions:

    t

  1. Preheat oven to 375 degrees F.
  2. t

  3. Place butternut squash halves on a large baking sheet or oven-safe baking pan cut-side up.
  4. t

  5. In a small bowl, whisk together olive oil and herbs.
  6. t

  7. Add a generous pinch of salt and pepper.
  8. t

  9. Brush herb oil all over the flesh of the butternut squash. Season squash with salt and pepper.
  10. t

  11. Bake for 35 minutes or until squash is fork tender. Serve warm.
