Halloween Pumpkin Pudding

Ingredients:

  • 1 pound silken tofu, drained
  • t

  • 2/3 cup pure maple syrup
  • t

  • 1 cup canned pure pumpkin
  • t

  • Generous pinch of salt
  • t

  • 1 teaspoon pumpkin pie spice

Directions:

  1. Place all ingredients in a food processor or blender and puree.

  3. Divide into dessert cups and refrigerate for 3 to 4 hours to firm up.
