Sweet Potato Hash

Serves 8

Ingredients:

  • 2 tablespoons olive oil
  • t

  • 2 tablespoons coconut oil
  • t

  • 1 small onion, diced
  • t

  • 2 pounds sweet potatoes and/or yams, scrubbed, diced
  • t

  • Salt and freshly ground black pepper
  • t

  • 2 green apples, diced
  • t

  • 1 tablespoon minced fresh rosemary
  • t

  • 2 tablespoons minced fresh parsley
  • t

  • 1 cup chopped walnuts

Directions:

  1. Heat oils in a large skillet over medium heat.
  2. t

  3. Add onion and sweet potatoes and season generously with salt and pepper. Cook, stirring often, for 10 minutes.
  4. t

  5. Add apples, rosemary, and parsley. Cook, stirring often, for 5 minutes.
  6. t

  7. Cover skillet and cook 10 more minutes or until sweet potatoes are tender. Season with salt and pepper to taste.
  8. t

  9. Stir in walnuts and serve immediately.
