Spicy Spinach and White Bean Soup

Ingredients:

  • 3 tablespoons olive oil

  • 1 small onion, diced
  • t

  • 2 carrots, diced
  • t

  • 2 celery stalks, diced
  • t

  • 1 red bell pepper, seeded, diced
  • t

  • 1 jalapeno, seeded, minced
  • t

  • 2 cloves garlic, minced
  • t

  • 5 cups packed fresh spinach leaves plus more for garnish
  • t

  • 4 cups tomato juice
  • t

  • Generous pinch cayenne pepper
  • t

  • 2 (15-ounce) cans white beans, rinsed, drained
  • t

  • 1/4 cup finely chopped fresh cilantro
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. Heat oil in a large pot over medium heat. Add onion, carrots, celery, bell pepper, and jalapeno. Cook, stirring often, until carrots are just tender.

  3. Stir in garlic and spinach and cook, stirring, until spinach starts to wilt.

  5. Add tomato juice and cayenne, stirring to combine. Simmer for 10 minutes.
