Roasted Grape Chutney

Makes 1-1/3 cups

Ingredients:

  • 1 cup seedless red grapes, each cut in half
  • t

  • 1 cup seedless green grapes, each cut in half
  • t

  • 1 tablespoon lemon-infused olive oil
  • t

  • 1 tablespoon red wine vinegar
  • t

  • 1 tablespoon minced fresh parsley
  • t

  • Salt and freshly ground black pepper to taste

Directions:

  1. Preheat oven to 425 degrees F. and spray a large rimmed baking sheet with cooking spray.

  3. In a medium bowl, combine all ingredients, tossing to coat with olive oil and vinegar.
  4. t

  5. Spread grape mixture on the prepared baking sheet.
  6. t

  7. Roast for 20 minutes or until grapes begin to shrivel. Remove pan from the oven and let chutney cool sligthly before serving.
  8. t

  9. Store cooled chutney in an airtight container in the refrigerator for up to 3 days.
