Date Coconut Balls

Ingredients:

  • 1/2 cup vegan butter
  • t

  • 8 ounces pitted dates, chopped
  • t

  • 3/4 cup chopped pecans
  • t

  • 3/4 cup vegan granola
  • t

  • 3/4 cup shredded coconut

Directions:

    t

  1. In a heavy saucepan over medium low heat, combine vegan butter and dates.
  2. t

  3. Cook, stirring constantly, until butter is melted and mixture is well blended.
  4. t

  5. Let date mixture cool then refrigerate until it is firm enough to be formed into balls.
  6. t

  7. Stir in pecans and granola. Use your hands to form mixture into 30 balls.
  8. t

  9. Scatter coconut in a plate and roll balls in coconut to coat.
