Quick Spinach Dip

Makes 3 cups

Ingredients:

  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • t

  • 1-1/2 cups vegan sour cream
  • t

  • 2 teaspoons dried Italian seasoning or herbs de provence or another seasoning of your choice
  • t

  • Generous pinch of red pepper flakes

Directions:

  1. Place spinach in a food processor and pulse a few times to finely chop.
  2. t

  3. Add sour cream and seasoning and blend well.
  4. t

  5. Transfer to a serving bowl and sprinkle with crushed pepper.
  6. t

  7. Serve immediately.
