Mocha Almond Cookies

Makes 2-1/2 dozen

Ingredients:

    t

  • 3 cups blanched almond flour
  • t

  • 1/3 cup cocoa powder
  • t

  • 2-2/3 tablespoons finely ground coffee
  • t

  • 1 teaspoon baking soda
  • t

  • 1 teaspoon salt
  • t

  • 2/3 cup coconut oil, warmed
  • t

  • 2/3 cup agave nectar
  • t

  • 1 teaspoon pure vanilla extract
  • t

  • 1 teaspoon pure almond extract
  • t

  • 1 cup chopped dark chocolate

Directions:

    t

  1. Preheat oven to 350 degrees F. and line 2 baking sheets with parchment paper.
  2. t

  3. In a large bowl, whisk together almond flour, cocoa powder, ground coffee, baking soda and salt.
  4. t

  5. In a small bowl, whisk together coconut oil, agave and vanilla
  6. t

  7. Pour coconut oil mixture into flour mixutre and stir until moistened.
  8. t

  9. Stir in dark chocolate.
  10. t

  11. Drop dough by heaping tablespoonfuls onto a parchment lined baking sheet
  12. t

  13. Bake for 8 minutes, rotating sheets after 4 minutes.
  14. t

  15. Cool on baking sheets for 5 minutes then serve warm.
