Easy Vegan Brownies

Ingredients:

  • 2 tablespoons ground flax
  • t

  • 6 tablespoons water
  • t

  • 2 cups white whole wheat flour
  • t

  • 2 cups granulated sugar
  • t

  • 3/4 cup unsweetened cocoa powder
  • t

  • 1-1/2 teaspoons baking powder
  • t

  • 1 teaspoon salt
  • t

  • 1/2 cup coconut milk
  • t

  • 1 cup coconut oil, melted, cool
  • t

  • 1 teaspoon pure vanilla extract
  • t

  • 1 cup walnuts

Directions:

  1. Preheat the oven to 350 degrees F. and grease a 13×9-inch baking pan.

  3. In a small bowl, stir together flax and water.
  4. t

  5. In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder and salt.
  6. t

  7. In a large bowl, whisk together coconut milk, oil, and vanilla.
  8. t

  9. Add flax mixture to coconut milk mixture and whisk until smooth.
  10. t

  11. Add flour mixture to coconut milk mixture and blend until smooth.
  12. t

  13. Stir in walnuts. Spread evenly in a prepared baking dish.
  14. t

  15. Bake for 30 to 35 minutes or until brownies are set.
  16. t

  17. Let cool in the pan for 10 minutes before cutting into squares.

Cook’s note: You can dress these brownies up by thinly spreading a chocolate frosting over cooled brownie before cutting into squares and topping each brownie with a walnut.
