Veggie Tortilla Wraps

  • 1/3 cup vegan mayonnaise

  • 8 large lettuce leaves
  • t

  • 1 large red bell pepper, seeded, cut into strips
  • t

  • 2 ripe but firm avocados, halved, pitted, peeled, sliced
  • t

  • 1/2 small red onion, sliced

Directions:

  1. Lay tortillas on a flat surface and spread with mayonnaise.

  3. Line tortillas with lettuce leaves.

  5. Evenly divide pepper, avocado, and onion among tortillas.
