Curry Carrot Salad

Serves 4

Ingredients:

  • 1 cup plain soy yogurt
  • t

  • 1 teaspoon curry powder or more to taste
  • t

  • Generous pinch of salt
  • t

  • 1 pound carrots, trimmed, thickly shredded (use your food processor with a large shredding disk)
  • t

  • 2 apples, cored, diced
  • t

  • 2/3 cup raisins

Directions:

  1. In a small bowl, whisk together yogurt, curry, and salt. Set aside.
  2. t

  3. In a large bowl, combine the remaining ingredients.
  4. t

  5. Drizzle half of the yogurt dressing over carrot mixture and toss well to coat. Add more dressing, if desired.
  6. t

  7. Serve immediately.
