Vegan Taco Salad

Serves 4

Ingredients:

  • 4 cups shredded lettuce or mixed greens
  • t

  • 1/2 red onion, chopped
  • t

  • 1 small red bell pepper, chopped
  • t

  • 2 cups vegan refried beans
  • t

  • tortilla bowls
  • t

  • 4 vine-ripe tomatoes, seeded, chopped
  • t

  • 1 cup sliced olives
  • t

  • 1-1/4 cups shredded vegan cheese
  • t

  • 1-1/2 cups guacamole
  • t

  • 1/2 cup vegan sour cream
  • t

  • 1/4 cup finely chopped fresh cilantro
  • t

  • 3 green onions, sliced (green and white parts)

 

Directions:

    t

  1. In a large bowl, toss together lettuce, red onion, and bell pepper.
  2. t

  3. Heat refried beans and spread 1/2 cup on the bottom of each of 4 plates. Set a tortilla bowl on the beans and press down to secure.
  4. t

  5. Fill each tortilla bowl with lettuce mixture. Top with tomatoes, olives, cheese, guacamole, sour cream, cilantro, and green onions.
  6. t

  7. Serve immediately.
