Red White and Blueberry Slaw

Ingredients:

  • 4 cups shredded green cabbage
  • t

  • 3 green onions, finely sliced (green and white parts)
  • t

  • 1 cup fresh raspberries
  • t

  • 1 cup fresh blueberries
  • t

  • 1 cup chopped walnuts
  • t

  • 1 cup vegan mayonnaise
  • t

  • 3 tablespoons olive oil
  • t

  • 2 tablespoons red wine vinegar
  • t

  • Salt and freshly ground black pepper

Directions:

  1. In a large bowl, gently toss cabbage, raspberries, blueberries, and green onions.

  3. In a food processor or blender, combine mayonnaise, oil, and vinegar. Blend until smooth. Season with salt and pepper.
